How ghee is made from fresh buffalo cream
Ghee is butterfat with the water and milk solids removed. Making it takes patience, and the quality of the milk shows in the result.
In the cream-based method, fresh milk gives up its cream. The cream is collected and churned into butter. The butter is then heated gently, so the water cooks off and the milk solids settle and brown. The clear golden fat is strained into a clean jar.
Buffalo milk is rich in fat, which gives a creamy ghee with a full flavour.
This is the idea behind KUMUD Pure Desi Ghee. We make it by hand, in small batches, from the cream of our own buffalo milk. To see how this differs from the bilona method, read cream-based vs bilona ghee.
